  1. Wash and core the apples using an 8 spoke apple corer as these produce uniform segments to work with. You can do everything by hand but this reduces the time by about 70%.
  2. Finely slice each segment into three more slices to make them thin enough to dehydrate.
  3. Once all the apples are thinly sliced, add them to a bowl and sprinkle the cinnamon over the top. Now carefully hand mix the apple slices with the cinnamon to ensure an even coating on all slices. You may want to add half the cinnamon, mix the apples then add the other half.
  4. Place the coated apples slices on a tray in your dehydrator with a little room around each slice. Leave overnight (or for 8+ hours) and check in the morning. They should be satisfyingly chewy, not too crunchy.
  5. Add them into a kilner jar and keep them in the fridge for when you fancy a little bit of something sweet without the guilt, that will actually benefit your gut health!
