3Ground Elder Leaves (these pesky plants have been trying to take over our garden – I have just discovered that they are edible and provide a really nice nutty flavour!)
Instructions
Add the butter to a frying pan and swiftly add the chopped leaves and tomatoes.
Break the eggs (chicken eggs are fine – just try to source ethical, free range, organic eggs where possible) into a bowl and stir with a fork. Add the eggs to the pan.
Slice the avocado into strips and place on the top of the omelette mixture.
Add a pan lid to steam the top of the omelette (this saves attempting to flip it)
Cook through for 2 – 3 minutes and then serve with the fresh coriander and black pepper!
