you can use olive oil and a squeeze of lime juice

Fresh Coriander

freshly cooked, not pickled

Cherry Tomatoes

Yellow Pepper
Instructions
Pre-cook the beetroot and leave to cool before starting this recipe
Once cooled, chop into rough chunks, add the rest of the ingredients into a small hand blender and blend until you reach the desired consistency.
Serve with whatever you fancy and enjoy. I like mine with toasted wholemeal pitta and a side of hummus…!
