The faffy bit! Cut the bacon into small pieces, about 1 cm squared. Heat a saucepan with a little oil and fry until crispy. Then remove from pan the leave to one side.
Cut the potatoes into small chunks about 2 cm. Then boil in a pan for 7 minutes until almost cooked. Drain and set to one side.
Chop the pepper into small pieces. Add the pepper and the potatoes into a bowl and stir in a little oil and salt and paprika until covered. Then add these to the hot pan and continue to stir until cooked through.
Add in the bacon bites and then the chopped spinach at the last minute to wilt over the dish and serve! Yum!!!
