I used broccoli, cabbage and spinach

pre cooked potato
this works well with leftover veg

drizzle
Olive Oil

torn parsley
Instructions
Mash the leftover veg with one egg, combine well.
Preheat a fry pan with the oil.
Dollop mixture in and press down to form a flattish round shape.
Cook through a couple of minutes each side until start to get golden brown and a little crispy.
Leave this to one side and fry the second egg.
Add the egg on top of your bubble and squeak and garnish with fresh parsley.
