- 2 Eggs
- 1 knob Butter
- 1/4 Orange Pepper sliced
- 3 - 5 Cherry Tomatoes cut in half
- 3 Shitake Mushrooms sliced
- 1 handful Fresh Spinach or rocket
- 1 tbsp pumpkin seeds

Instructions
- Wash and chop the veggies.
- Beat the two eggs in a bowl. Heat up a non-stick frypan, melt a knob of butter then add the eggs.
- Add in the veggies (except the spinach) cover the pan with a lid for 2 - 3 minutes on a medium heat. Then add the spinach and cover for a further 1 minute.
- Serve and add the black pepper.
