  1. Blend, juice or mash the inside of the cucumber until smooth.
  2. Add this to the lime juice, fresh mint and ice cubes and shaker in your shaker (an empty jam jar works if you do not have a cocktail shaker).
  3. 'Muddle' the mint a little further. Use wooden spoon handle if you have nothing else to hand. This releases the oils in the mint - the healing properties of this drink.
  4. Pour this mix into the glass and top up with sparkling mineral water. Enjoy!
