It is great with salads, baked potatoes, fish, chicken, rice and pasta dishes, it even makes a great dip for crudités.

Ingredients
- 1 large handful Fresh Spinach
- 1 handful Fresh Coriander
- 1 handful Fresh Basil
- 4 - 6 tablespoons Extra Virgin Cold Pressed Olive Oil
- 1 whole Fresh Lemon, Juiced
- 1 pinch Crushed Black Pepper
- 4 small Cherry Tomatoes (optional)
- 1 pinch Cayenne Pepper (optional)

Instructions
- Add all ingredients to a blender and blend until smooth.
- This recipe can be easily adapted to suit your taste and include your favourite herbs. Parsley and Oregano are great alternatives and provide a more Italian flavour. Great with parmesan added to pasta dishes.
