  1. Wash and chop the veggies.
  2. Beat the two eggs in a bowl. Heat up a non-stick frypan, melt a knob of butter then add the eggs.
  3. Add in the veggies (except the spinach) cover the pan with a lid for 2 - 3 minutes on a medium heat. Then add the spinach and cover for a further 1 minute.
  4. Serve and add the black pepper.
