I love this simple tasty meal. Can be a starter or used as a main, as I prefer. This 70’s classic is really underrated in terms of nutrients and taste. Full of great fibre, zinc and calcium it will help to keep you satisfied and keep your IBS at bay.

Ingredients
- 300g prawns cooked, peeled, drained and dried
- mixed lettuce leaves (as much as required)
- 1 pinch Salt and Pepper (to taste)
- 1 Lemon cut into 6 wedges (to serve)
Sauce
- 4 tbsp Oatley Creme Fraiche
- 2 tbsp creamed horseradish
- 1 1/2 tsp tomato puree
- 1/2 Lemon (for the juice)
- 1 small pinch raw cane sugar
- 1 small pinch Chilli flakes
- 1 large handful salad leaves
- 1/4 Cucumber sliced and halved
- 5 - 8 Cherry Tomatoes halved
- 1 handful Fresh Parsley garnish

Instructions
- To make the sauce, mix all the ingredients together in a bowl and season with salt and pepper. Stir in the prawns
- Prepare the salad and arrange on a plate with a gap in the middle for your saucy prawns.
- Spoon the prawn mixture over the top and garnish with the parsley.
- Serve with a small lemon wedge and brown bread and butter. Gluten Free if required.
