- 1 portion gluten free spaghetti
- 1 peppered mackerel fillet
- 1/4 tin sweetcorn
- 1 large handful spinach
- 1 pinch Black Pepper
- 1 knob Butter
- 1 tbsp Oat milk
- 1 drizzle Lemon juice

Instructions
- Put the spaghetti on the boil, then cook for required time on the packet.
- Drain the pasta and return to the saucepan.
- Add in the spinach, sweetcorn, oat milk, butter and reheat. Simmer gently for a couple of minutes.
- Drizzle over the lemon juice, add the black pepper, stir and serve.
