This simple puree is a great accompaniment to many dishes. It goes well with salads, can be used as a dip and is versatile enough to spread on toast or used in a healthy wrap for lunch.

Ingredients
- 1 tbsp Olive Oil with Lime you can use olive oil and a squeeze of lime juice
- 1 bunch Fresh Coriander
- 1 medium Beetroot freshly cooked, not pickled
- 4 Cherry Tomatoes
- 1 slice Yellow Pepper

Instructions
- Pre-cook the beetroot and leave to cool before starting this recipe
- Once cooled, chop into rough chunks, add the rest of the ingredients into a small hand blender and blend until you reach the desired consistency.
- Serve with whatever you fancy and enjoy. I like mine with toasted wholemeal pitta and a side of hummus...!
