This simple, tasty, nutritious salad can be eaten as a main or a side dish. The onions are optional depending on whether your are intolerant or not, I like to swap them for slithers or celery which add crunch and flavour.

Ingredients
- 2 Little gem lettuce's
- 1 handful Black pitted olives
- 8 Cherry Tomatoes
- 1/4 Cucumber
- Half packet Feta Cheese Or vegan alternative if dairy upsets your tummy
- 1/4 small Red onion OPTIONAL - I leave these out as they don't agree with me
- Half Stick of celery
- 1 tablespoon Olive Oil
- Half Freshly Squeezed Lemon
- 1 pinch Crushed Black Pepper

Instructions
- Chop salad into small chunks.
- Chop cheese into small 1cm cubes.
- If you are ok with onions, slice into thin slices and add.
- As an alternative to onions, thinly slice the celery and add.
- Combine the oil, lemon juice and black pepper, stir and use as dressing.
- Mix all ingredients together and serve.
