Ingredients
- 1 large Sweet Potato peeled and cubed
- 1 Carrot chopped
- 1 knob Fresh Ginger peeled and grated
- 3 tbsp full fat coconut milk optional but makes it creamier
- 500 ml Vegetable Stock ONION FREE is best
- 1 pinch Turmeric for added healing
- 1 sprig Fresh Parsley for added digestive help
- 1 pinch Crushed Black Pepper for added antioxidants

Instructions
- In a large pan simmer the sweet potato, carrot, ginger, turmeric in the stock until soft.
- Blend until smooth.
- Add the coconut milk and stir off the heat.
- Serve and add the parsley and black pepper.
