Sweet Potato Salad
Sweet Potato Fajita Salad
Don’t be fooled by the homemade photo and less-than-perfect lighting – this colourful little bowl is an absolute feast for your gut!
Sweet potato provides fibre and plant compounds to help support a healthy gut microbiome, while the salad greens and fresh herbs add even more plant diversity. Olive oil provides healthy fats, and the combination of herbs, spices and lemon brings plenty of flavour without needing to drown everything in heavy sauces.
You’ve also got a lovely mixture of textures, colours and nutrients, and it’s naturally easy to adapt depending on what you have in the fridge.
Simple, colourful, satisfying and packed with plants – exactly the kind of everyday food your gut bugs love.
